Honey Almond Chicken

Here's an easy to prepare chicken dish. It's easy to scale up for more people and has potential for many variations.

 

  • 1 chicken, cut into serving pieces.

  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 2 T fresh ginger, chopped fine
  • 1/2 cup almonds, finely chopped

    1. Combine honey, soy sauce and ginger in a large bowl, and add chicken pieces. Marinate 1 hour.

    2. Place chicken pieces in large oven dish (eg, 9 by 14 glass pan). Bake at 400 degrees for 10', then reduce heat to 350 and bake for an additional 30’, turning twice. Sprinkle with the almonds and cook another 10-15’ or until chicken tests done.

    Variation

    Many variations are possible.

    •  If you use just thighs and drumsticks, or just breasts, chicken will cook more evenly.
    • Substitute garlic for ginger.
    • Use pecans or walnuts.
    • Add 2-3T hot chili paste for spicier version.

    Thai black bean chicken wings with almonds

  • 1 chicken, cut into serving pieces.

  • 1/2 cup thai sweet red chili sauce

  • 1 T fermented black beans

  • 1/2 cup soy sauce

  • 2 -4 cloves garlic, chopped fine

  • 1/2 cup almonds, finely chopped

    Preparation as above.
