  • Salmon filet (about 1 1/2 lb)
  • 2 tomatoes, sliced
  • 1 medium onion, sliced
  • 4 cloves garlic, chopped
  • 3 T fresh basil, chopped
  • 3 T fresh tarragon, chopped
  • 1 T olive oil

 

1. Mix tomatoes, onions, herbs and olive oil. Place salmon on a baking sheet, and cover with the tomato-onion mixture. Bake for 20' at 350 deg. Serves 4
