Golden Refried Rice

2 cups cooked rice (leftovers are perfect)
1 small onion, chopped
3-4 scallions, chopped
1/2 cup mushrooms, chopped
1/2 t turmeric

Heat 3 T olive oil in a skillet or cast iron frying pan. Add onions and mushrooms and saute until soft and translucent. Add rice and turmeric, and stir to prevent burning, until warmed through.
