Caper - Mint Slaw

2 cup cabbage, sliced or grated
1 carrot, grated
5 pepperoncinis, chopped
Ľ cup parsley, chopped
Ľ cup mint, chopped
1 T capers
2 T mayonnaise
3 T rice vinegar
Ľ cup virgin olive oil

Slice cabbage very thin, grate carrot, and chop pepperoncini

Mix other ingredients in large bowl, then add grated vegetables. Toss & serve
