Ginger Chicken with Bok Choy

  • 6-8 pieces chicken (legs and wings)
  • 3 T ginger, minced
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 3 scallions, chopped
  • 6 mushrooms, quartered
  • 1 cup bok choy, thickly sliced
  • ½ cup celery, thickly sliced
  • ½ cup soy sauce
  • 2 T rice vinegar
  • 1 jalapeno pepper, chopped

1. Saute chicken pieces with ginger, garlic and jalapeno.

2. Add wine, stir briefly, then add mushrooms and reduce heat. Add soy sauce, vinegar, cover and simmer 1 hr.

3. Add bok choy, celery, simmer another 20 minutes.
