Pecan Mushroom Orzo<

  • 1/2 cup mushrooms, sliced
  • 1/2 cup pecans, chopped
  • 1/4 cup fresh cilantro, chopped [or substitute parsley]
  • 1/2 cup feta cheese, crumbled
  • 1 medium onion, diced
  • 1 cup orzo
  • 1/4 cup white wine
  • 2 T olive oil

    Cook orzo, drain; add 1 t olive oil, mix & set aside.

     In rest of olive oil, saute mushrooms & onions 5 ', then add pecans and continue to saute.

    Pour in the wine and stir to deglaze. Add the orzo, feta & cilantro, mix and serve.
