Palak Bhujjia [fried spinach]

  • 10-12 oz fresh spinach, chopped [or 1 cup cooked]
  • 1/4cup mushrooms chopped
  • 1/4cup pine nuts
  • 1/3 cup feta crumbled
  • 1 T olive oil
  • 1/2 t turmeric
  • 1/2 t cumin
  • 1/4 t ground coriander
  • Sauté mushrooms & pine nuts 5'. Add spinach, stir for 2', then add spices, ˝ cup water and reduce heat. Simmer for 10-15' then transfer to serving bowl, add feta and mix
