Chicken with Feta & Summer Squash

  • 2 chicken breasts, cut across the grain in 1” strips
  • 2 medium summer squash, cut in ¾” slices
  • 1 T olive oil
  • 1 anaheim (or bell) pepper, diced
  • 3 scallions, minced
  • 1 can tomatoes
  • 3 cloves garlic, minced
  • ¾ cup feta cheese, crumbled
  • 1 egg or eggbeater equivalent.
  • 1 T fresh rosemary, chopped
  • 3 T fresh cilantro, chopped
  • 1. Toss chicken pieces in beaten egg to coat lightly, then sauté in olive oil. Remove and sauté squash in the same pan.

    2. In a 9x9 baking dish, combine the canned tomatoes, scallions, pepper, rosemary, cilantro and garlic. Fold in the sauted chicken and squash and mix lightly. Top with crumbled feta and bake in 300 deg oven for 1 hour.
