Chard Gorgonzola

  • 6 cups Swiss chard (or spinach), cleaned, ripped in large pieces [about 10-12oz]
  • 1/3 lb Gorgonzola cheese (can substitute Bleu cheese or Roquefort)
  • 1/2 cup mushrooms, sliced
  • 1/2 cup bread crumbs

 

  1. Quickly cook chard in 2 T olive oil -- stir until leaves start to wilt.

  2. Layer in a baking dish:  Chard, mushrooms, cheese, bread crumbs.  Make at least 3 layers

  3. Bake in 350 deg oven for 20'.

Serves 4
