Calamari Bangkok

  • 1 1/2 lb whole squid, cleaned [or 1 lb pre-cleaned] and cut into rings
  • 4 T fresh basil, chopped
  • 1 small green Thai chile (or jalapenno) chopped
  • 1/2 cup lb fresh mushrooms, quartered
  • 1/2 cup fresh bean sprouts
  • 3 scallions, chopped into 1" pieces

Stir fry the onion and mushrooms in 2 T hot peanut oil. Add the squid and cook quickly. Toss in the bean sprouts, basil and chile, then reduce heat. Serve with rice.
